Ever
since Sicily, the heart of the Mediterranean, has been playing an
important role in the agricoltural production, especially as regard
wheat, wine and oil. In the Southwestern part of the island washed
by the sea and surrounded with mountains, is located Sciacca, town
of Phoenician origin, ever since devoted to agricolture and fishing.

In
the territory, characterized by upland plains and lows hills, olive
trees in the native varieties of Cerasuola, Biancolilla and Nocellara
del Belice have been cultivated for centuries. |
The
most favourable period for the olive crop is when the colour is
changing, that is when the olive takes on a superficial colouring
and the pulp is still clear, |

the manual crop is carried out using combs, ladders and nets. |
